Very few ingredients are needed to make this vegan beet arabic bread with whole wheat flour. Beets must be cooked and soft to puree them (must be cold to make the recipe). This will produce a smooth and homogeneous dough.

As a result, a moist dough is obtained from the beet, don’t be afraid to sprinkle with flour as much as necessary to prevent sticking or breaking the dough when stretching.

Arabic bread or pita bread is characterized by being bread without crumb, which is inflated and when cut it is left with a hole inside which is usually filled with different ingredients. Generally, it is a thin bread, although each one will do it the way that want to prepare them (this is the good thing about doing it at home).

About cooking:

When it is baked, it fully inflates and this is when it is known that it is ready to be removed from the oven (this takes about 5 minutes). It is not baked until it is golden since it is a thin bread, when it cools it will be crispy or hard and it is not the idea of this recipe. Also, if it is removed from the oven in time, it is soft and malleable and can be roasted later if desired.

Sometimes the bread is not inflated and we ask ourselves, why do we fail? One of the most common ways in which mistakes are made is that when stretching the dough, folds, thus avoiding its correct inflated by the heat of the oven. So pay attention and stretch in a uniform way. Sprinkle with flour if necessary so that it does not stick.

One way that I found to be successful with Arabian breads is to always leave the tray in the oven. Remove the cooked breads and place the next batch without removing the tray from the oven. In my opinion the oven and the tray should be very hot.

Each one has its own way of doing it, but this does not mean that you follow my way of doing it. You have to try different methods, if it does not work, you do not have to be frustrated. Keep trying until you find the point.

Vegan Beet Arabic Bread With Whole Wheat Flour Recipe

INGREDIENTS

  • Beet puree 200 g / 7.05 oz / 0.44 lb
  • Whole wheat flour 500 g / 17.63 oz / 4 ¼ cup
  • Water 220 cc / 1 ¼ cup
  • Instant dry yeast 8 g / 0.28 oz / 1 ½ tsp
  • Whole cane sugar 5 g / 0.17 oz / 1 tsp
  • Salt 6 g / 0.21 oz / 1 tsp
  • Sunflower oil 50 cc / ¼ cup / 3 ¼ tbsp

INSTRUCTIONS

  1. In a bowl place the water, sugar and dry yeast. Dissolve, cover and leave to rise for 15 minutes.
  2. In a bowl or kneading machine place the whole wheat flour, salt and the beet puree. Mix.
  3. Add the pre-ferment. Knead until a smooth dough is obtained.
  4. Divide the dough into equal parts, make a bun with each of the parts (I made 16 of 60 grams each). Cover so they do not dry out. Let rise until they double in size.
  5. Sprinkle the dough with whole wheat flour if necessary and flatten with your fingers (do not form creases or bend or break). Stretch the dough with a rolling pin to the required size and thickness.
  6. Bake at very high temperature (230 °C - 250 °C). For 5 minutes or until the bread is puffed. Remove, stack the bread so they retain their moisture. Store in a plastic bag so they do not dry out. Freeze if you wish.

NOTES

  • With this recipe 16 Arabic breads of 15 cm diameter came out. You can freeze them.
  • Consume preferably before 3 days.
  • It can be frozen (3 months).
  • Whole wheat flours depending on their brand can absorb more or less amount of liquid. Be sure to incorporate liquids gradually.
